sawdust vs. corn cob grit

What is the specific purpose of each sawdust and corn cob grit. Is sawdust mainly used for drying the hide while in a tumbler and grit used to bring out the sheen of the hide in a tumbler. Do these fulfill the same purposes as each other and they are just personal preference for which one to use.

Though I try not to use sawdust on birds (there are microscopic splinters that stick in the feather barbules making it sometimes difficult to remove from primary feathers), both are used for drying. You'll find tanneries like the sawdust as it absorbs more water faster than grit and it doesn't stick to hair like it does feathers.
