I have a couple of weasle skins and a couple coyote skins. What is the best way to tan them? Not to mount. Just tan the hides and leave them as is, but soft and supple.

the BEST way to tan them is to prep them as directed and send them to a tannery. :-) And that's the very BEST advice I can give you...honest.
what you are trying to do is very difficult. I did a beaver for a guy, and talk about tough! I hand fleshed VERY thin, as a matter of fact a fellow taxi commented that it was as thin as any he had ever seen. Tanned via instructions per McKenzie tan. Oiled, broke, oiled broke, oiled, broke..... and it still wasn't, what I would call, soft and subtle. So the above is honest, in my opinion. Then again your idea of soft and subtle may be different than mine. Best of luck.
