I was curious as to the best way to install glass eyes in a fiberglass shark replica, since I'm pretty new to this. I've seen the flex eye sockets on Tohickon's website, and I was wondering if this would work to replicate the white eye band on a shark. Any ideas?

You can build it up after setting the eye with Apoxie Sculpt. I wouldn't wast my money on the eye sockets, but that's just me.
I'm guessing that once you dremmel out the fiberglass "eye" (from the casting) that you will have a hollow inside with nothing to set the eye(s) upon. What I do with replicas is I shove paper towel pieces inside until I have enough backing for my Apoxie Sculpt to grab onto. Then plop a ball of Apoxie Sculpt (or like material) into the eye socket/hole up against the paper towelling. Then place the Flex eye onto the ball of Apoxie Sculpt. Shove it in until you get the eye the appropriate depth (reference) with the excess Apoxie oozing out around the eyeball. I'll then wet my fingers and sculpt in the eye lid/band using this excess Apoxie - disposing (or re-using elsewhere) any Apoxie that is not needed.
Use an artists brush and denatured alcohol to clean off excess Apoxie. Get it good and clean so it shines when the denatured alcohol is wet. Once the alcohol dries it will appear cloudy. This is just fine as it will go away upon glossing with your final gloss coat...
