I just started my first mount and the ears were incredibly thin I cannot get them to go right side in again without them tearing, is this usual? Did I flesh and remove too much cartilege.

trim them

The deer in my area have small ears
even the small earliners are too big
when I remove the cartlidge from to ear I lay it on the earliner, trace it and always have to trim lots of the liner and then thin the edge by scraping with a knife blade
works for me

look up ear magic in recent post
its better than bondo and easier than ear liners
and once you get used to using it
you can get a very thin, accurate ear that will not drum
and being a beginner those hose that you poke your finger through
dont sew them just trim off after
do some research its grat stuff
