I am about to start my first duck and I noticed that the duck that has been in the freezer for about a year has a rub on the head where the feathers won't lay down and are all ruffed up. Can this be fixed?

Thawing the bird will release most of the problem, and skinning, washing and refluffing will eliminate those unruly feathers. Hopefully they didn't get rubbed or broken loose! In the future carefully wrap birds in paper bags or some guys with understanding wives use nylons which will help protect your birds. Care must be taken as a frozen bird will break, and it is very embarrasing to find a bird with a busted off head. Good luck!
