Mike it really depends on the climate where the duck is thawing. Is it 50 degrees or 90 degrees? Typically i mash on the breast area of my duck and when it starts getting a little soft I know i can skin the duck.

I forgot to mention........do NOT speed up the thawing process with a microwave!

I usually just take mine out of the deep freeze that morning, and while I'm getting ready to head over to the shop, I soak them in luke warm water. They are thawed and ready to skin about the time I'm dressed and ready to tackle the day. This works on duck sized birds.. Geese I would definately set out overnight in a cool place.
