Just like all the other hides. They need to be thinned down to the "blue" where the hair roots begin to been seen but not cut. I just spent 14 hours doing one yesterday and if your shoulders aren't killing you, your fingertips burning and your back throbbing, you haven't shaved it deeply enough.

What do you do with a hide when fleshing and get called away for awhile? I live in a very hot, humid area and this always worries me.

I just leave it on the shaving table

Now I don't know how hot, "hot" is, but if all the flesh is removed, there's not much imminent danger of spoilage to the skin itself. A few minutes away shouldn't bother it, but I'd never leave it for 3 or 4 hours. You'll just have to find room in the fridge for it. I TRY to plan around mine when I'm doing them so I won't need to be away for any length of time. And who would want to come back to such a job "tomorrow". Bummer.
