Amature trying a turkey

I'm a real rookie and have only done a couple of shoulder mounts. They turned out beyond my expectations so I'm encouraged. I know that a turkey is a whole different matter but If I learn a few things, it will be worth it.I would like to try one that I have in the freezer. It is skinned out except for the wings, legs, and tail. They are still all attached. I know there is a lot of hard work to come and my first will probably not look too great but I want to try. My first question is, when I thaw it and start to clean all the meat etc, out of all the parts, If I don't finish this in one setting, can it go back in the freezer? Ive been doing a lot of reading on this great forum. Thanks for all the great info.

Taxiermy Today has alot of info in back issues. Contact them and read their articles, they are very thorough. They show how to clean the wings, everything. Hope it helps

back issues.., 66,67,68, and 75 have great articles on turkeys. Cally Morris uses his techniques in these issues. Your mounts will only get better with practice! Good luck!

refreezing turkey

Thanks Bill and Greg for the info. I will check the articles out. But does anybody know if you can refreeze a turkey if you take it out to thaw to flesh, and clean the meat out of the wings, tail etc but don't have time to finish, can you refreeze or should you refrigerate?
I have bought books and a dvd on turkey mounting and I'm reading tons of archives but haven't had this question answered.
