This is my first attempt at a coon. I have fleshed everything except the tail. I stripped out the tail and can see that there is a couple of inches that has a lot of fat attached. What is the best way to remove this. Do I have to split the tail partially or all the way? Also, how long to soak in Degreaser? Any thoughts would be greatly appreciated. Thank You, Sharon

Sharon, you should split the tail all the way to the tip. There is a thin layer of fatty tissue and veins the entire length. The tail skin on a 'coon is a litle grainey an can be torn if using a scraper to flesh. It helps to use a scalpel and cut thru the membrane that is inside the tail to allow access to the fatty layer. The heavy fat near the base can best be taken off using scissors. After overnight with salt a skife knife can remove more of the fat and membrane. As far as degreasing goes, it all depends on the one you're using. Follow the direction for your brand.
