What is the best way to secure leg wires of a bird mount ( such as a Chukar ) to a wooden, flat , round panel ? Thanks Mitchell !

Dremel you out a channel on the bottom of the panel for the wire to lay in. Bend them over into the channel. Staple the wires down.
I cut the wires off a little shorter than the panel thickness, then I drill a slightly larger hole than the wire size and countersink the underside, then with a little two part epoxy I screw a short (1/2") screw along side the wire, this pulls the leg wires tight and secure. Just be sure and use short enough screws to not go through the panel.
