Need help on dispatching pen raised birds

I have some merriams (turkeys)and chukar that I am wanting to mount. They are currently alive in their pen. How do you all dispatch your animals without messing up the skins or hides?
I have heard that electricty is the most humane. Using a electric cord, with alligator clips, one on the vent on the wattles, then plug it in.
Is this how its normally done and do you get shocked when you hold the bird for this? Ill admit I have a huge fear of electricty. No its not rational but even a slight tingle is too much for me LOL.

The will be in the middle of molt. Plumage right now would be about as bad as the come. I would wait until early late fall/winter.

I know they are molting, Im asking now so I can be prepared when they are back to full plummage. any thoughts on the electricty thing? I appreciate the help

Dispatching chickens

My dad used to hang chickens by their feet and jab a long needle-like tool up through their mouth. They just relaxed and were quite still as I remember. No thrashing about. Maybe you could do the same with turkeys.
