First full body mount coyote

What is the best way to skin a frozen stiff coyote that was shot through the back? The mannikin is in sitting pose.
I also need to alter the closed mouth to an open mouth. What is the best way to do this?

until thawed, then dorsal skin him. open the mouth with a dremmel tool, and sawsall blade.
