Yes you can freeze them till you get the tape. We can sit down here and try to tell on how but it might take up to much space. Better if you seen the video. If you want to skin quickly for freezer space, then in the miidle of the chest, ( this is on all Birds ) there is skin covering the breast plate with no feathers on it. This is where to make you first cut. Then slowly cut or push the skin away from the meat. When you come to the joints of the wing and legs cut them off there. Take care around the tail, the skin is more fragile there. Cut the neck off where it joins in the back. Just take it slowly till the tape comes in. Watch it two times then proceed and rewatch were needed. If you have questions after write us.

Red,
My buddy Frank is right on as always, but on a turkey or any bird with a BIG tail, I remove the tail before I skin it. It makes everything easier and reattaching it is a piece of cake.
To do this, grab the "knob" that holds all the tail feathers and then push the back feathers up out of the way. (There is a natural demarcation line where no feathers grow at the top of the knob). Carefully cut the entire knob and tail feathers off the turkey and then skin it just like Frank said. The whole turkey will then fit in a brown grocery bag and take up very little space in your freezer till you video arrives. You might want to try the Turkey Mounting Book sold by WASCO also.

Red,
I don't know what video is best, but Issue # 47 of Breakthrough
Magazine has a good article on mounting turkeys the Cary Cochran Way.
I just mounted my first two turkeys from that article, and they turned out great.
