The splits are all healed up , so there is just a big v in the ear.

Haven't done to many bears, but the splits I encountered were similar to a whitetails. I just went slow and easy and worked it to the edge.
We have "done in" alot of bears though up in Ontario, anyone interested in a great bear hunt just let me know.

If you turn the ears all the way and open up the splits (tear them right on the seams) they can be sewn back to normal repairing the split. Make sure your customer does not want them left in though.

I use liners, so I would split them in the normal way, and re-split the healed edge so that the ear is open like "new". If you want to leave the open V, then slide the liners in, cut out the liner that shows through the opening, and then glue the healed edge shut again. If you want to repair it so the open V no longer will show, then just put the skin on the liner the normal way and glue the V shut, too. Sewing really is tough as the hairs get twisted on either side of the edge.
