Turkey breast mount

I will soon be doing a turkey breast mount, which I have not done before. My directions state to skin the whole body from the legs forward, including the wings to the first joint. My question is, is it necessary to skin that much? Seems to me you could simply cut the skin just in front of the wings and save some work. Or for some reason is that much extra skin needed?

I just skin "around" the wingbutts.

I seem to have plenty and don't skin to the first joint on the wings. You can kind of see the "seams" in the feather patterns and use them as a guide.
