I am going to start doing turkeys this fall . in the past I did a few in the spring and did them right away . I need to know what prosses I should take in storing the birds , whith the least amount of freezer space. Can I skin them and preserve and leave them to dry and rehidrate later or will it ruin the skin? Any tips ?

thanks Doug

Here's what I do

I skin the birds when received and detatch the tails. I go ahead and flesh/wheel the skin and clean the tail quills. If I am going to mount the turkey within a month or so, I will go ahead preserve the tail and bondo the tail quills in place and allow the tail to dry. I put the skin back in the freezer. When you are ready to mount the bird, thaw the skin, wash, dry, and mount. If it will be awhile before I mount the bird, I will freeze the tail and the skin both. Hope this helps.
