Freezing birds with just the skin

I have a question I hope someone out there can answer for me. Is there a safe way that when you receive birds in that you can skin them and put back into the freezer for later use, without having the skin from getting real dried out? I heard that some freeze the bird skin in water and then later when they are ready to work on it, they just thaw it out.. Thanks!

I usually skin all my turkeys when they come in and just freeze them. Neatly place them in a garbage bag and they will be fine. They might get alittle dry but they rehydrate really quickly and there is no problem. They are usually in the freezer like that for 8 to 10 months. I have also done the same with small birds (pheasant, grouse, ducks, etc..) but that is just when the freezer space gets alittle tight. They will dry out alittle quicker but you shouldnt have any trouble with them. Hope this helps out alittle.

I've noticed that the smaller less fatty birds dry out faster . Take a paper towel that is wet and squeezed out and put it inside the body before freezing . This should help a little . Rick

in a small ziplock filled with water.

Never had a problem.
