Fleshing Turkeys

How long does it take you all, on average, to flesh a turkey? I am spending half a day on skinning and fleshing (wire wheel). I've done several and it doesn't seem like I'm getting any faster. By the time I wash, tumble, and finish drying, it's about time to close up shop. Just curious as to how long it takes you all.

It can be a pain in the you know what to flesh a turkey. Speed will come with time. I can skin and flesh a turkey in about 1 hr. (by skin I mean invert the wings and do the drumsticks.) The key is don't rush.............

I skin them when I get my hands on them, about 45 minutes, depending on how much time I spend skinning and how much I spent talking (with my hands). I shoot to prep; wheeled and wings stripped, two birds in the better part of one day, washed and left damp dry in the fridge. Then mount one a day. There goes half the week. The mount up doesn't take the whole day, but its nice to have it if needed. If I can't (or won't) mount it in the next day or two, I'll freeze the prepped skin. Unless you're doing a bunch of them, like one after another, the repetion required to get fast at something isn't there.
