Pheasant Feet

Sorry, I hit the submit button accidentally before I could put the pheasant feet question in there. My question is, when I started washing my pheasants a few years ago, I started having problems with some of the birds slipping the scales off of their feet. I don't know whether I should keep them out of the water if thats whats loosening them up or what, but its a shame because I get them put togehter and the scales fall off, and I won't have scaleless pheasant mount in my house so I just throw them away. Is there any way to prevent this? Any help is appreciated. Thanx, Dana

This is a common problem with Pheasants and Quail. The less you handle the legs and feet and the faster you get the mount done the less problem you will have with it. Could be defrosting too long also. I try to skin them while still partially frozen. You can put a bacteriacide in the wash water also.

Thanks Tony

Thanks for the info on the rooster feet. I've often wondered if I was handling them too much. I'll give your advice a go around. Thanx again, Dana.
