Wondering If It would be alright to use scissors instead of a wire wheel for turkeys?

The "sponge" nearly has to be removed with scissors. Very little fat exists in the skin that can't be done this way, though the tract along the bird's back will need a little more close attention. A fine wire brush can be used there if you don't have access to a defatting wheel.
I scissor all my birds, then to the wire wheel they go to get down in between the feather tracks.
