I believe i got all the fat off the turkey tail as much as possible with out the feathers falling apart is there anything else I should do?

Position it on a flat board or cardboard into what ever shape you're wanting,(fanned out or whatever) and put borax on the meat part and let dry for several days.
If you dont have any borax on hand you can also use caning salt.
