What is the preffered method to remove the meat from the wings of ducks and geese? Turning them or making an incision and picking it out? I guess I am looking for the most popular methos to save time and not have to sew a bunch more! I've never had much luck turning the wing all the way, I'm afraid I'll rip open a gaping hole and cause myself more grief than its worth. Thanks for any advise in advance.

I try to turn the wings on all my birds. If I choose not to open up the thumb area of a big bird like a Canada or turkey, I'll inject embalmbing fluid into the thumb area. You mentioned not wanting to tear a big hole by turning the wings, if you open the wing up you are guaranteed a big hole to sew. Take your time and be sure to clip all the quill bases as you get to them. You can then use clay, epoxy, or caulking to replace the meat taken from the wings. Good luck.
