Need Turkey Head Advice

I've searched the forum archives to no avail... I am painting a Cary Cochran Art. Turkey Head. Question is, do most of you paint the red on the carunclues(sp) and then go back and spray the blue/gray between them, or do you paint the blue first and then go back and spray the red. Any advice/opinions? Thanks!

After doing over 70 turkeys we are air brushing the tones from lightest to darkest (white to violet). Then detailing the caruncles
by hand brush in three different reds. We find it the quickest most customer pleasing way.

I do just the opposite (sort of)

After I paint the head white, I go in very close with an airbrush and paint the Payne's Gray lines across the head. Then I go back with the white to tone the harsh edges out. In the finer caruncles, this gives it an almost translucent veining appearance.
