The wings easily invert over the bone with a little practice and effort. Never open a wing on a bird you don't want the judges (or the customer) to see how bad your work is. Maybe guys like Tony Finazzo and Nancy Mulligan could get away with it, but I know I sure couldn't.
Mike, if you are talking about the belly incision, it absolutely can and should be hidden. Make sure your wires are not sticking up on the body, and back brush the feathers it will be a good seam. Also make uniform stitches that are not pulled too tight. If you are talking about the underside of the wings, George is right. Don't do it.

but yes it can be done. just look at the wing prior to making your incision and cut close to and under a row of feathers. This way when you sew up the incision, the feathers will lay over the stiches and they will never be seen.
But seriously, Wing inversion is possible all the way to the wrist. Just go slow until you get the technique down. There is a small tendon that conects the humerous to the ulna/radius. This has to be severed before you can get to the secondary feathers which are attached to the bone. I usually take my fingers or other tool and seperate as much skin from the wing as possible on the wing and then I will take the blunt side of my scalpel HANDLE and push the the secondaries off the bone. I then skin down past the wrist until the first Primary feather is reached. Once learned, it's a very fast, efficent and easy process. I dont think I have ever run across a bird where I couldn't invert the wing. Granted, on Turkeys and swans you may have to physically cut the secondaries from the bone rather than push them off... but they still work in the same manner.
