Help on pheasant eyes

I skinned, defatted, etc. my first pheasant yesterday and put it in the freezer. It's a small pheasant and I was wondering what size eyes I should use. I checked the archives, it said to measure the width of the iris on the carcass. These eyes measure 8mm. I can't find any pheasant eyes that are that small. Any suggestions?

Also, around the eyelids on the inside there is what appears to be pale muscle tissue. This needs to come off, right? How do I remove it without tearing those delicate lids? My video doesn't show what to do about it.

The 8 mm eye you've measured is probably the iris only. Pheasants and all upland gamebirds have oversized eyeballs and a #10 will be a minimum for most pheasants. There are various colorations of pheasant eyes, so pick the one that suits you best or matches the bird at hand. Good luck.

is the smallest I would go.. and that would be on a 1st year bird.. But generally speaking like George stated, they will carry a 10mm in most circumstances.
