Cleaning pheasant wings, newbie

Hi all.......I have searced the archives and can't find a clear answer. When cleaning the muscle from the wings, do you try and leave the tendons intact. Thanks in advance.

I cut them out along with all the other meat. There is no purpose or benefit to leave them in there. Good luck...

There are a couple of places that you can (should)leave the tendons. The wide tendons that hold the elbow joint together should be left to the extent that the hunerous and tibia and fibula do not come apart. I trim them close to the joint but do not remove them entirely. The flight web is also a tendon. Some folks remove the flight web and others do not. I have tried it both ways and prefer not to remove it. It helps keep the forward small feathers aligned when pinned to the manikin. All the meat and other tendons can be removed without a problem. As with most things in taxidermy there are many different ways to do things and many opinions on each. Good luck.
