The BIrd Manual will cover everything you need to know to start.

Get a video in addition to a book. Any upland bird video will do since many of the BASIC procedures are the same. A book has tons of info- but watching someone do the things like skinning, fleshing etc is very helpful. Many of the taxidermy supply places have good videoes. You may want to a few birds from a game farm to practice on. The learning curve is huge at first. A pheasant might be a better 1st bird than a quail.
