I was wondering from some of you that say you skin birds prior to freezing
do you flesh and wash them as well or just skin and freeze. Any input would be appreciated.

If I plan on freezing the bird again I like to complete the whole skining and fleshing process at once, however, I don't think it makes a big difference.
I skin all my birds and then refreeze. Saves space in the freezer and gives me a better feel for the actual condition of the bird so I can contact the customer if there is a problem I missed on intake. As noted above, if I have the time I will skin, degrease and wash before freezing again. If there is not time to do all the steps I will freeze without doing them. It is important to note that freezing a skinned bird increases the potential of freezer burn if you use a frost free freezer and refreeze "dry". I re-freeze the birds wet and vacuum pack them. If you do not have a vacuum packer double bagging in plastic bags also works well as long as you get most of the air out. Remember to keep all the tags and identication materials with each bird. Birds can stay good for years if packed as noted above. Good Luck
