Just wondering what methods some of you use to thaw out your birds and how you use them.

I usually take them out of the freezer, wrap them in a towel and stick them in the frig until they are soft enough to skin. The wings, legs are moveable but the breast is usually still firm but not necessarily frozen solid.
I don't have a business so I just do it at a leisurely time.
