not sure what to do with the head on a guinee fowl. Heck I'm not even sure how to spell it! My plan is to skin it out and have it freeze dried, any other counsel from the elders would be appreciated.

Your best bet is to either cast the head yourself, or purchase one already done. The ones I've seen that were freezed dried looked like sh.t, and needed alot of work done to them.
