Can someone please tell me if I'm correct? When mounting a turkey on the limb, the thigh and lower leg are lined up and come straight down? Or is there is slight bend at the knee? Any help would be greatly appreciated. Thanks.

A bend at the knee is natural. If you leave the knee straight (no bend), the turkey will look awkward.
Look at your reference. I wouldn't even attempt a "new position" (or an old one for that matter) without it.
