scissor defatting

could someone explain what using scissors to defat a bird means, and how to do it? i am fairly new to all this, all i have ever done is just using a knife to scrape it out.

When I do them with scissors (I still do the sponge on a turkey that way), I use a pair of curved blade scissors. For smaller birds, I use smaller scissors, for turkey's, I use the large stainless steel ones Van Dykes sells.

With your off hand, hold the bird skin, fat side up and push your index finger upward to hold the fat at a high point. With your prime hand, carefully snip the fat off without cutting the skin or quill butts. Try to follow the tract of feathers to make it easier and work your hand continually to keep the fat at a high point for your scissors.

does it work as good as other methods? do you have to do extra stuff to it, or does it take care of the whole process?

And before some wiseguy with a wire wheel came along, it was the only method we used.

that a guy who still uses DP would still be fleshing ducks and turkeys with a pair of scissors!Must be he wants to do it "s l o w l y"
