when mounting a standing bird do you need to put wires through the wings or can you just pin the wings against the body

both

both techniques will work, but my personal favorite is to use very light wire and go clear out to the last digit of the wing. The fine wire will bend well but holds the anatomy in place. Usually on waterfowl I pin them but use the wire sometimes just because I am comfortable with it.

WIthout wire, wings look pinched

Wiring wings on a standing bird gives it a nice full look. It is very easy to give a bird a pinched looked if you just pin the wings.
