The best wheel out there is one you feel comfortable with and take the time to practice on.
I have had Soft Touch, Van Dykes and currently one I built from components I bought from Stefan Savides.Different folks swear by or swear at all of them.
There is not a wheel out there that will do everything you want with no damage. Bird fleshing is mostly a matter of developing your own technique and your own feel for the skin while at the wheel.
i have 3 different ones to do different types of birds. wood ducks need a real light gentle wheel cause they are so delicate and if they get caught on the wheel they wont get wrapped around the wheel cause it will stop. I have a heavy duty for turkeys. But whatever works best for u
