after you paint your turkey heads is it a good idea to put some sort of sealer or finish coat on them THANKS

I put a semigloss clear spray sealer on mine to keep the paint from chipping easily. I use the spray cans like artists use for their work. You can buy it in most hobby stores. It's non-yellowing and that's what you need.
I use a matte spray that is similiar, if not the same, to what George is talking about. Make sure to spray them from about 18 inches back. Put on a very light coat, let dry for a while and repeat. If you get too close, the finish goes on too thick and really makes the head look artificial. Make sure to check feathers on back of neck and clean eyes. This finish coat is harder to get off the eyes than the water and/or laquer based paints most commonly used. I leave the paint on the eyes until I'm through with the finish coats. That makes cleaning the eyes a little easier. When all is done this helps keep the paint from being rubbed off the caruncles, and waddles, as well as eliminating the chalky look most paints leave on the head. Good luck.
