CLEANING TURKEY LEGS

Hi anyone,
I got a turkey in to put on a plack. He cut the legs off and the beard. How do i clean them? They smell a little. Please help!
How do i clean the legs on a full mount too.

Here's what I do

I've only been doing this for a little over a year, but so far, so good..,
IF it's not too late for the legs, I will give them a good scrubbing in Dawn dish soap, and Lysol concentrate (deodorizes).I'll then cut the tendons out through the foot. After this, I'll soak them in Preserv-It for a few hours. Afterwards, I'll inject them with a 50-50 mix of Preserv It and Elmers glue and set them to dry. After they dry, I'll spray some polyuthereane on them, usaully two coats, and let that dry.
I started taxidermy by mounting 4 turkey half mounts last year, and so far, all of the legs have held up fine, with no rotting or smelling. There are other ways, I'm sure, but that's how i do it.
