Yes you can freeze them until you are ready. Insted of writing war and peace here, go and back order the Break Through magazine that talks about mounting a turkey by Cally Morris. . This will give you the best insruction.
But bottom line remove the tail, and all meat. Leave the skin holding the quills together. Then wire wheel the fat and remaining stuff from the bottom on the quill.
then lay the tail in the positiion desired, and but light weight bondo on the quills. In 5 mins you are done. Then go get one of the tial mounting boards at wal-mart or whomever you want to buy it from and place it on the wall.
