Van Dykes has a video that covers from skinning to finishing, but the methods used in it are poor. The guy wraps a body and uses the real head w/out freeze drying it. My first turkey mount looked better than the one this guy did in the video. I would recommend that you buy Frank Newmyers video. He goes a little overboard for the average commercial taxidermist, but it is good. He doesn't cover skinning, fleshing, or painting.
My main recommendation is that if you have never done birds before, that you start on a pheasant or 2, then do some ducks, then try a turkey. I can't imagine trying to do a turkey as a first bird.
As far as freeze drying goes, I like Harry Whitehead (859)233-9619
My first bird was a turkey. Many experienced folks told me to try an easier bird, but I turkey hunt and that's what I had. I bought the back issues of Breakthrough with the Turkey Mounting articles on Cally Morris methods. It's a great step by step procedure and my bird came out fine. Not top notch, but better than many beginner pheasants, etc. If you like turkeys, go for it!
