skinning a grouse

I am planning on getting a ruffed grouse mounted I shot today.I would like to keep the breast to eat. What cuts can I make to breast out the bird but not hurt the mounting process.

Start at where the breast ends and carefully cut up to the crop area. Then slide your fingers between the skin and the meat to release down almost to the back of the bird. When you have the breast free, cut them out. Fill the cavity with a wet papertowel, wrap and freeze until you're ready to have the bird mounted.. good shooting, there a tough critter to get...
