After all the time and trouble we go to getting all the fat and meat out of a bird to keep the bugs out, how does a freeze dried head on a turkey escape the little meat munchers?

I have been told that they are injected with substances that discourage our buggy little fiends. I sure hope it's true.

(It may vary from one preparer to the next, too.)

I wonder why...

I would like to know the answer myself! As far as I know, nothing except water is injected in the turkey head. The only reason we use water is to plump up the head, because it shrinks a little during freeze drying.

I worked for Harry Whitehead a few summers back doing turkey heads for him. we/he uses a mixter of water & liquad#7 in his heads. Never any trouble with bugs as far as I know.
