Most "novice" categories are "looked at" rather than "judged". If you truly want improvements, you just have to jump into the deep end of the pool. Whether it's the "open" or "professional" divisions offered at the competition, go in with the knowledge that you're likely to get hammered. Don't take it personally. Take it INDIVIDUALLY. Take each individual flaw the judge pointed out and fix it. Understanding full well that he couldn't have found ALL the flaws, you can take pride in not making those same INDIVIDUAL mistakes on your next mount.
yeah, it wouldn't hurt for you to go in the pro category. it sounds like you have the right attitude and are going for education. whatever category you're in, ask the judge questions and really be open to what he has to say - you'll be amazed at what you will learn. However, I think he'll also talk to you based on where you're at. My first show, he didn't even talk detail, just basic anatomy - with good reason, I was way off (and still not perfect). I'd recommend following the judge around and "over hearing" the crituques on other mounts - and talk to the other competitors and get their opinions. You'll really get a lot from it
good luck and enjoy the show

Definitely enter in the pro category
Keep the pose simple
Anatomy and balance should be your focus..
Keep base simple and make sure it compliments the mount and doesn't detract from it.
