Hey guys and gals. I skinned my first Turkey last night. What a lot of work! Took me over two hours and I still haven't fleshed or defatted anything. I'm use to ducks so figuring out what right looks like is a process in itself i guess.
But what about that stuff in the crop? That sucked!
Is there a trick to skinning so that stuff stays with the carcass and not come off with the hide? I had a hard time telling the hide from the carcass.
What's the key to getting it off the hide? Scissors and knife work?

I use the large stainless steel curved blade scissors that Van Dykes sells to remove mine. It reducings the amount of cut-throughs I have. Some guys flesh them with a power washer and have none of those problems us poor folks do. LOL
I use a dull razor blade & flesh it off that way. Just go slow & when you fill the blade hit a feather guill just back off some. use some DB our borax to helb take out some of the "slime". But after you do a few 100 like i have it will get easer.
Turn the skin inside out, and put it in the freezer for a few hours until it starts to freeze, then it slices off with a razor blade quite easily, and much less of a mess.
unless you're looking for a new brand of Mousse for your hair, don't be foolish enough to put it on the wheel until the VAST majority of it is gone.. Trust me.. not a pretty sight.
