I had a judge tell me I needed to change the color of a turkey tongue to pink one time. I have no idea where he got his info unless it was from an artificial tongue he found in a freeze dried head. A turkey's tongue does have a hint of a pinkish hue, but is more white, tan and gray (probably closer to the color of a bass' tongue than a human's). If you have a turkey head in the freezer thaw it out and look inside. It will certainly have changed some (just as the head itself did), but will give you some idea.
