Ringneck

This is only my 3rd bird but my first 2 went well and I was wondering if I was supposed to do somthing special to a ringneck before I start fleshing it because of all the extra fat (first duck I have tried) when I started fleshing it was almost like it was falling apart I have burned a hole or two but this was as if it were just ripping apart without effort. The ringneck is mine so I am not upset but a little dicouraged. I do however have a green wing in the freeser for a customer that I really dont want this to happen to or I will be sewing for a week, any feedback will be appreciated

Usually a diver's skin is actuall tougher than a puddle duck. If it is "ripping" at the start of your incision, you put too much pressure on that point while trying to flesh. Just take it slow and gentle and as George says...let the wheel "melt" that fat off. Also, try using the softest brush made for your flesher.
