Pheasant Wattles

I'm new at birds and have just skinned, fleshed and washed my first pheasant. I've just started to try to open or turn the wattles and have checked the archives and recent posts on this subject. Most indicate that the wattle should be opened to produce a small pocket which you would fill with clay. I plan on using an artificial head (but with the original beak) as sold by one of the large supplers. This being the case, can I just carefully remove the entire fleshy inner part of the wattle with a scalpel just as i would flesh around a deers eye?
