I've got a Paasche airbrush setup (single action) I'm having trouble with trying to get the proper pattern. I've got 3 different tips to use and none seem to be what I'm loking for. I'm ready to finish 2 deer that I've completed and now I'm at a standstill. Any suggestions will be helpful.

You haven't given us enough information. And and several others on here have used that particular airbrush for ages and have never had any problems with their use. Are you using lacquer or acrylic. Read the directions. A #1 is for inks and thinned slow drying lacquer, a #3 is for lacquer and thinned acrylic paints, and a #5 is for heavier applications, even thinned epoxy. The #3 tip is the standard and can paint tiny spots on rainbows to the heavy stripes on marlin. So you need to tell us much more for us to be able to help.
I'm spraying lifetone waterbase paint. I've sprayed many, many others with no problems. Just that this time something is wrong with the brush and I can't figure it out. Seems like either I get no paint or it "spurts out and causes a huge mess ! ?

Dismantle your color adjusting part and the air cup and let them soak for a few minutes in lacquer thinner. Blow them dry and the reassemble. Run some lacquer thinner through the complete cycle of the color adjusting part.
Next, if you're using paint out of a applicator bottle, pour it out and clean your bottle. Strain your paint and add a few drops of clear sealer (water base) and try it. If you're using the 1/4 ounce mixing cup, soak it in lacquer thinner and make sure it flows well. If it does, then strain your paint before you put it in the mixing cup.
And sometimes even all this doesn't work. I chuck the whole tip and replace it with new parts.
Gonna give it a try ! I'll let you know what the outcome is.
Every time I try to use this airbrush, paint spurts out of the bottle's air vent. I ahve taken the brush apart and soaked carefully and I still can't figure it out. It should pick up paint , but ,instead it blows out air!
Any help would be appreciated!
