I'd like to do a grazing/feeding shoulder mount(head down,shoulders up) but commercial forms are just about nonexistent. I believe Mr. Chase has one but.....I'm thinking of starting with a full sneak, whack a wedge out just above the brisket and take it from there. Anyone ever do an alteration like this? Any ideas?

You had the suppliers correct state, but wrong supplier. Try looking in the Joe Coombs catalog for his drinking buck. Thats an easy alteration to grazing. McKenzie makes some nice sneaks for the other alteration you mentioned.
Skinny pencil necked Pa. deer. 14 inches at it's largest circumference. That's what I meant by non existent
