How do you get the skin folds in the neck of a deer mount. I have always cut ridges or filed them in but I can't get mine to look right. Some mounts have such small rolls in the neck and have good detail, how do I get those in my mounts?

It takes a fairly deep ridge to show on heavt haired capes.
Also you may wish to buildup the rdiges with clay.
You will also need a very good hide paste i.e. Epo-Grip 2 part hide paste, with EG 2part you will not need to pin the ridges, just model them pressing the hide deep into those ridges.
You can use a water based, but you will need to pin the creases in with brads and use small bird necking to hold the crease down, using t-ins to hold the foam necking in place.
You will need to tend water based hide paste daily until it sets up.
