wish that they would come out with an aluminum or stainless steel skife knife. No matter what I do to the darn thing it rusts really bad.

I havent peeled potatoes in years, and thats also the last time I used a skife knife! Stainless steel blades on a surgical scalpel is what Ive gotten used to. For that rust, try soda, or leaving it standing up in oil, working side down.
Don Stevens had an aluminum skife knife at the Piedmont Mini-Course this year. I'm not sure where he got it. I would love to know because I have had several and they rust with the slightest bit of mousture. I'm like Bill, I don't use them anymore. However, if I could find one that didn't rust so easily, I might switch back.
At my age I have trouble keeping my wits sharp, much less a Ca-nife or a Strife, or a ....er.....whatever sharp. Gimme those scalpel blades. You want a rust free knife? Get some of that cheap 10% HCL solution called, "The Works" - $1 a bottle at Big Lots. That will knock rust off a mother-in-law's chastity belt. Remove rust, and then dip into kerosene and allow to drain. The kerosene will leave a film on the blade that will inhibit rusting between uses.
Skrife? Skeefe? Scroffe?....Th' thang used for skiving.....Not to be confused with a parachute.
