I brought a set of bleached white antler sheds to a taxidermist to have them stained to look natural a few years back. They came back to me entirely stained dark brown (very ugly and unnatural). Does anyone know of any chemicals that might remove stain so that I can restain them to my liking, or should I try to rebleach them and start over, and if so, how would I do that?

By definition, stains soak into the pores of the material being stained. Bleaching likely will only work marginally and you'll still have to leave them in the sun for awhile.

Soft grit will do then sand to likings. Some things you might just have to live with like taking a bleached set probably was weather worn too. You can only do so much with what you took him.
Kyle,Where did you have your,s done as I also had bad results. The taxidermist told me he could do it as he had done it before.Well when I got them back my 3 year old could have done better. On one set of antlers he replaced a brow tine then stained the whole rack a dark chocolate brown.I thought he would have tried to match the brow with the rack.I then found on here that he was asking advice on how to do the repairs.I live in Nova Scotia.
Staining and repairing is one of my specialties. I had the perfect stain combo then the brand went out of business. Had to start over, and I finally got a decent replacement. A good shade is hard to find.
